Proof Tavern, a New Dining and Gaming Establishment, Set to Open at MonteLago Village at the Lake Las Vegas Community

Las Vegas, Nev. – Proof Tavern, a new gaming and dining establishment in the Lake Las Vegas community, is scheduled to open in MonteLago Village in early April. Proof Tavern will provide patrons 21 and over with a diverse array of menu items ranging from American comfort foods to classic favorites with a modern twist, a full service bar including specialty craft cocktails, wine and spirits and gaming.
Founded by UNLV MBA alum and former Golden Entertainment executive Sam Tibolt, Proof Tavern will be the only gaming establishment within the Lake Las Vegas community, offering 15 video poker machines for patrons to enjoy. The tavern will host various gaming promotions and offers throughout the year.

With 6,440 square feet of space, Proof Tavern provides guests the options of bar, dining room or patio seating, and the establishment has a second floor and bar available for private events with a variety of food and beverage packages for up to 30 people.
Created by Executive Chef Jon Littleton (formerly with Mario Batali outposts B&B Burger, B&B Ristorante and Carnevino), Proof Tavern’s menu features upscale American cuisine including seafood, steak, sandwiches, salads, burgers and appetizers as well as many internationally inspired dishes. Catering to both visitors and locals, the tavern offers a wide variety of breakfast, lunch and dinner offerings such as Steak and Eggs, Burritos and Frittatas for breakfast, and Pan Roasted Wild King Salmon, Braised Short Rib and Eggplant Parmesan for lunch or dinner.
At the bar, Proof Tavern will offer a craft cocktail menu, fine wines and spirits, as well as select happy hour specials Monday through Friday from 4 to 7 p.m.
